Language
The official language of the conference is English.

Abstracts
The abstract should be written in English within one page on A4 paper. Typing area is limited to 16 cm width* 22 cm length (single spacing, Times New Roman font, 10 point). The title (bold 12 point), authors and affiliations (10 point) should be entered on separate lines, with the presenting authors name underlined.

Presentations
The duration for the plenary lectures, keynote lectures and oral presentations are set for 40, 30 and 20 minutes, respectively. Question answering time of 5 minutes is included. Lecture venue will be equipped with a multimedia digital projector.

Posters
A board of 90 cm width * 120 cm height will be allowed for each poster display. Posters can be pinned up on bill board by help of the 10th IHC reception desk.

Authors are invited to submit papers presenting original and unpublished research in any aspect of hydrocolloids. The topics of the conferences include:

1. Chemical, biochemical and physicochemical characterization of hydrocolloids

2. Aggregation and self-assembly, carrier structures, controlled and responsive release in hydrocolloids

3. Rheology of gels, solutions, emulsions/ dispersions and processing relevant to hydrocolloids

4. Natural and biodegradable materials and recycling

5. Novel hydrocolloids: microstructure and applications

6. Hydrocolloids in nano-science and nano- technology

7. Progress in starches and applications

8. Hydrocolloid safety and hydrocolloids as biofuncational and functional ingredients in food, pharmaceuticals and cosmetic, personal care industries

9. Hydrocolloids as dietary fibre and prebiotics: from structural functionality to nutrition and health

10. Industry and enterpriser forum

Participants are invited to submit abstracts of their contributions via e-mail to IHC@sjtu.edu.cn as an attached WORD file. Please indicate the theme area ( 1; 2; 3; 4; 5; 6; 7; 8; 9; 10) and preferred form of presentation (Oral or Poster).
